Berry Cheesecake Trifle

This is a favorite dessert of ours this time of year. It’s got that whole red-white-and-blue thing going on, plus it takes advantage of the berries that are in season this time of year!

Ingredients: 

One container each of strawberries, blueberries, blackberries, and raspberries, or whatever is in season

Good vanilla wafers — I like Trader Joe’s Ultimate Vanilla Wafers 

3 – 8oz pkgs Neufchatel or cream cheese

16oz sour cream

1 cup sugar

1 1/2 tsp vanilla

Bring Neufchatel and sour cream to room temp. Reserving a few cookies, crumble the rest. Wash and dry berries, quartering strawberries. Beat Neufchatel and sour cream using an electric mixer until smooth. Add sugar and vanilla and beat again. 

Assemble:

In a tall, narrow-ish bowl such as a souflee dish or trifle dish, layer as follows: half the cookie crumbs, half the cheese mixture, 2/3 of the berries, remaining cookies, remaining cheese mixture, remaining berries (arranging nicely). Decorate with reserved vanilla wafers.
