It’s not dessert, it’s a salad…right? So I can keep eating it?
Zucchini-Carrot Bread
1 1/2 cups whole wheat flour
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 egg
7/8 cup sugar or Splenda for baking
1/4 cup brown sugar
1/2 cup oil
1 1/2 teaspoons vanilla
1 cup finely grated zucchini
1 cup finely grated carrot
1/2 cup chopped walnuts
Mix dry ingredients in a bowl and set aside. IIn a separate bowl, beat egg and add sugars. Then add oil and vanilla and mix until smooth. Mix in dry ingredients. Add vegetables and nuts and mix to combine. Pour into (small) greased loaf pan. Bake 50 minutes at 350° or until an inserted toothpick comes out clean.
